Mediterranean Tuna Linguine
Ingredients
- 8ounces uncooked linguine
- 1tablespoon olive or vegetable oil
- 1/4cup finely chopped celery
- 3cloves garlic, finely chopped
- 1can (28 ounces) crushed tomatoes
- 1can (9 ounces) tuna in water, drained
- 1/4teaspoon freshly ground pepper
- 1/3cup quartered pitted Kalamata olives
- Fresh Italian sprigs parsley, if desired
Steps
1 Cook and drain linguine as directed on package.
2 While linguine is cooking, heat oil in 10-inch skillet over medium-high heat. Add celery; cook 2 to 3 minutes, stirring frequently, until celery begins to soften. Add garlic; cook and stir 30 seconds.
3 Stir in tomatoes, tuna and pepper. Cook 5 to 8 minutes, stirring frequently, until slightly thickened. Stir in olives. Cook 2 to 3 minutes or until hot. Serve sauce over linguine. Garnish with parsley.
